Zucchini, Bacon and Cheddar Bread

3 eggs
1 tbsp. sugar
½ cup oil
1 cup zucchini, grated
1 cup chopped bacon, cooked and drained
1 cup grated cheddar cheese
6 tbsp. milk
1 ½ cups all-purpose flour
½ teaspoon baking soda
½ tsp. baking powder pinch of salt
1 tsp. black pepper

In a blender, add eggs, sugar, oil and blend for 5 minutes. Using a wooden spoon, add the zucchini, bacon and cheese. Mix well. Add milk and mix well. In a separate bowl, combine flour, baking soda and baking powder, salt and pepper, then slowly add to wet mixture and mix well. Pour the batter into the parchment-lined loaf pan and bake at 325 ºF/170 ºC for 1 hour 20 minutes to 1 hour 40 minutes. Test with a toothpick to see if the centre is cooked.

Cooking times for different pans:
You can prepare it in a 9 x 13-inch pan, double the recipe and check if it is cooked through after about 40 to 50 minutes. You can also use this recipe (same amount of ingredients) to make 12 muffins, bake at the same temperature for 30 to 35 minutes.
